Broccoli and Rice


Dinner was pretty much perfect.

Looking for an amazing, southern, down-home, makes your belly feel all fuzzy and warm, way better than Cracker Barrell side?

Look no further!

My Aunt Diana's broccoli and rice casserole will blow your socks off!

2 lg heads fresh broccoli
1/2 c. onions, finely chopped
1 c. rice
1 can cream of chicken soup (You could used the reduced fat soups...)
1 can cream of mushroom soup (But why...)
1 small jar of Cheese Whiz (When you're putting delicious Cheese Whiz in it?)

Cook broccoli until tender and then coarsely chop. Cook rice. Saute onions in large pan with a little oil. Mix the soups and cheese in once onions are tender and simmer until thoroughly heated. In the bottom of a 2 qt. casserole dish, mix together the broccoli and rice. Top with the cheese mixture. Bake 10 minutes at 375 degrees. Stir all ingredients together and bake for an additional 5 minutes. If you like livin' on the edge, you can add shredded cheese on top for those last five minutes. We skip this step because we like this dish to be healthy! :)
